Executive Chef Vojtěch Petržela leads River & Oyster with precision, discipline and a clear ambition: to move modern Czech gastronomy forward from a room built around fish, fire, stocks and sauces.

About the chef

Vojtěch is one of the most talented chefs of his generation and one of the most ambitious figures in Czech gastronomy. His goal is not only to cook excellent food, but to build a restaurant that can stand among the gastronomic destinations of Europe.

Every day is guided by one idea: to be better than yesterday. He studies techniques, looks to the best kitchens in the world and believes that excellence is built from thousands of small details guests may not name, but always feel.

Oysters, river fish, roe, stocks and sauces. Each dish is built with a clear reason.

Open flame, smoke, grilling and careful reductions give the kitchen its depth.

Season & responsibility

Czech herbs, fruit, vegetables and dairy meet careful sourcing and responsible use of each product.

Local ingredients

Where possible, the kitchen works from the Czech landscape: seasonal vegetables, herbs, fruit, dairy and honey. Beyond Bohemia, we choose named producers for oysters and fish whose quality can carry the plate.

Sustainability

Freshness decides the menu, not convenience. The kitchen uses the whole product where possible: skins, bones, bellies and trim become stocks, sauces, crisps, smoke or staff meals.
